Vegan Banana and Papaya Smoothie Bowl

What's cooking? It's snowing outside and I wanted something comforting but oddly, something cold too. So I made a vegan smoothie bowl with frozen papaya, banana, soy milk, and topped with blueberry chia jam. After making this photograph, I decided to embellish it with more bananas and raisins! DELISH! Although  I wish I had red berries for color like strawberries or even pomegranates.

Yummy yummy yummy yummy Yuuuummmy.

My tiny human had a taste and she approved. My little man never turns down a good smoothie. So I call this WINNING!

Ingredients (makes one serving):

  • 1 1/2 Cups frozen papaya
  • 1 large very ripe banana
  • 1 Cup of plant-based milk (I used unsweeted soymilk, I'll bet coconut milk would take it to a whole other level of awesome)
  • 1 Tbsp of Chia Seeds
  • 1 healthy scoop of blue berry chia jam (or add fresh blueberries)

Method:

Blend in all except blueberry jam in blender until it reaches your desired thickness (I used my Ninja Blender but you can use any blender that's able to handle it.) Add more milk if you want it looser. Pour in favorite bowl, garnish with jam and chia seeds. Top with additional fruits if desired (like I did but forgot to take a decent photograph of it).
