What’s Cooking? Vegan Banana Faux-Nog!

I have been a vegan since July after being a vegetarian for about 10 months now. It hadn’t dawned on me until sometime in October, that I will not be able to enjoy eggnog unless I found a great vegan version. Well, I did. There are a few commercial brands that are putting out their dairy-free eggnog and for the most part, they are delicious. The problem is, my family consumes a lot of it and since it’s a seasonal beverage, we traditionally make ours from scratch. The expense to do that was minimal in comparison to commercial brands and so we made homemade eggnog often, even off season. Well, now that I’m a vegan, I needed to find something that would pass the eggnog test.

This was made with a lot of trial and error. I'm grateful for my two sons to volunteer as my taste testers. Fortunately for me, they're brutally honest. A few batches were a fail but this last attempt is a winner. I do hope you agree and if not, please let me know how you'd improve it.

Ok, so this was NOT the final version after all. There is one more faux-nog that I came up with that is more true to color and texture. I've included the second at the end...so you'll get TWO awesome fuax-nogs and like the saying goes "two nogs are better than one" (sorry, I tend to be corny sometimes hahaha)

Vegan Banana Faux-Nog #1 (Serves 2; optional protein boost)

Ingredients

  • 2 Medium Ripe Bananas
  • 2 1/2 Cups of Dairy Free Milk (I used soy)
  • 1 tsp of Nutmeg
  • 1 Tablespoon of Cinnamon
  • 1 Tablespoon of Vanilla Extract
  • 2 Tablespoons of Coconut Palm Sugar
  • 2 Tablespoons of Flax Seed (optional)

Vegan Banana Faux-Nog #2 (Serves 2)

Ingredients

  • 2 Medium Ripe Bananas
  • 2 Cups of Dairy Free Milk (I used soy)
  • 1 tsp of Nutmeg
  • 1/4 tsp of Tumeric
  • 1 TBSP of Blue Agave Nector

Directions for both versions:

I used my Ninja Blender to blend the above ingredients in listed order. You may want to increase the sweetness if not sweet enough for you and I added flax seed for the protein boost.
